GINGER SOY CURLS

This is one of our most popular recipes and we’re sharing everything but the secret sauce with you! To make the full Easy Vegan Ginger Soy Curls replica, you will need to purchase our ginger soy sauce as an add-on to your subscription or through our Vegan Starter Kit. You can make this using a teriyaki sauce, or another slightly sweet, umami-forward sauce that you love.

This recipe makes about 2 servings and can be easily doubled or more1

What you’ll need:

  • 1 cup rice - brown, white, wild, your choice!

  • 90 grams soy curls

  • 180g (1 small head or 2-3 crowns) broccoli

  • 2-4 cloves garlic

  • 1 small shallot or onion

  • 2 stalks green onion

  • 60 grams (about a thumb-sized piece) ginger

  • 2 tsp sesame seeds

  • 6 tbsp Easy Vegan ginger soy sauce (or substitute teriyaki sauce)

  • 3 tbsp arrowroot powder

  • 2 tsp powdered ginger

  • 1-2 tbsp cooking oil

Let’s cook!

  1. Cook the rice according to its packaging instructions (rice cooking time will vary depending on the type of rice you chose). A relatively safe rule of thumb for 1 cup is to add the rice and 2 cups water to the pot and bring to a boil then reduce to a simmer until the water is absorbed (about 25 minutes).

  2. Put the soy curls into a bowl and cover with water - let them rehydrate for 10 minutes.

  3. Finely chop the shallot/onion, garlic, and ginger. Slice green onions for garnish and cut the broccoli into florets.

  4. Heat a skillet over medium heat with some oil. Once the pan is hot, add the shallot/onion and cook for 3 minutes.

  5. Add the garlic and ginger and cook for another 5 min. Once these have started to brown removed them from the pan.

  6. Blanch the broccoli - boil a pot of water about 1 inch deep. Add the broccoli to the pot and steam for 3-4 minutes or until a fork can pierce through the stem of the broccoli.

  7. Squeeze the excess water from the soy curls and coat them in the arrowroot powder and powdered ginger.

  8. On medium high, heat the same skillet used for the onion, garlic & ginger with some more oil. Once heated, add the coated soy curls and cook for 5-6 minutes. Allow them to brown.

  9. Reintroduce the cooked onions, shallot, and garlic into the skillet. Add the sauce and 2 tbsp of water. Stir for about 1 minute, allowing for some caramelization, then remove from heat. Add pepper to taste.

  10. Serve rice, soy curls & broccoli garnished with green onions and sesame seeds.
